A vibrant and fluffy strawberry poke cake, perfect for summer gatherings.

Ingredients

  • 1 box yellow cake mix
  • 1 package (3 oz) strawberry gelatin
  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup fresh strawberries, sliced
  • 1 container (8 oz) whipped topping
  • 1/2 cup sweetened condensed milk

Instructions

  1. Prepare the cake mix according to package instructions and bake in a 9×13 inch pan. Allow the cake to cool for about 15 minutes.
  2. Dissolve the strawberry gelatin in 2 cups of boiling water. Stir until completely dissolved.
  3. Poke holes all over the top of the warm cake using a fork.
  4. Pour the gelatin mixture over the cake, making sure it goes into the holes.
  5. Refrigerate the cake for at least 2 hours to allow the flavors to meld.
  6. Prepare the strawberry topping by mixing cold water and sweetened condensed milk, then adding sliced strawberries.
  7. Assemble the final cake by spreading whipped topping over the cooled cake and topping with the strawberry mixture before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Avoid freezing to maintain texture.
