A nostalgic Pineapple Upside Down Cake featuring caramelized pineapple and cherries, perfect for gatherings and celebrations.

Ingredients

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices
  • Maraschino cherries
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a round cake pan over low heat and sprinkle brown sugar over it.
  3. Arrange the pineapple slices on top of the sugar mixture, placing a cherry in the center of each slice.
  4. Mix together the flour, granulated sugar, milk, eggs, vanilla, baking powder, and salt until smooth.
  5. Pour the batter over the arranged pineapple and cherries.
  6. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool for a few minutes before inverting onto a serving plate.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers wrapped at room temperature or in the refrigerator.
