A rustic peach galette that captures the essence of summer with juicy peaches in a flaky crust.

Ingredients

  • 2 cups fresh peaches, sliced
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1/4 cup cold water
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon raw sugar (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C) to prepare for the baking magic that’s about to happen.
  2. Combine the sliced peaches with granulated sugar and lemon juice in a bowl. Toss gently and let it sit to draw out those delicious juices.
  3. Mix the flour, sugar, and salt in another bowl. Cut in the cold butter with a fork or pastry blender until the mixture resembles coarse crumbs.
  4. Add cold water to the flour mixture, stirring until a dough forms. Turn it out onto a floured surface and roll it into a circle.
  5. Transfer the dough to a parchment-lined baking sheet. Arrange the peach filling in the center, leaving a 2-inch border.
  6. Brush the exposed edges of the dough with the beaten egg and sprinkle raw sugar on top.
  7. Bake for 30-35 minutes, or until the crust is golden brown and the peaches are bubbling.
  8. Cool slightly before slicing to ensure the juices set up for neater slices.

Notes

Serve warm with vanilla ice cream or at room temperature with whipped cream. Store leftovers in an airtight container for up to 2 days.
