A creamy, nostalgic rice pudding recipe that brings the warmth of grandmother’s kitchen to your home.

Ingredients

  • 1 cup of rice
  • 2 cups of water
  • 1/2 cup of sugar
  • 1/4 teaspoon of salt
  • 4 cups of milk
  • 1/2 teaspoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon
  • 2 eggs (beaten)
  • Raisins (optional)

Instructions

  1. Cook the rice in a pot by bringing the water to a boil and adding the rice. Cook for 15 minutes until tender, then drain any excess water.
  2. Combine the cooked rice, sugar, salt, milk, and vanilla extract in a large pot. Cook over medium heat, stirring frequently until it thickens (about 20-25 minutes).
  3. Temper the eggs by beating them in a bowl and gradually adding a little of the rice mixture into the eggs, then stir the egg mixture back into the pot.
  4. Continue cooking for 2-3 minutes until the mixture thickens further.
  5. Add the cinnamon and raisins (if using) after removing from heat.
  6. Serve warm or chilled.

Notes

For a creamier texture, consider using a richer milk, like whole or half-and-half. Experiment with different spices for unique flavors.
