A delightful dessert featuring a crispy meringue base topped with whipped cream and fresh mixed berries.

  • 4 egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon cornstarch
  • 1 cup heavy cream
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Beat the egg whites until soft peaks form. Gradually add the granulated sugar, continuing to beat until stiff peaks form.
  3. Fold in the vanilla extract, white vinegar, and cornstarch until well combined.
  4. Spoon the meringue mixture onto the prepared baking sheet, shaping it into a circular disc with a slight dip in the center.
  5. Bake for about 1 hour, then turn off the oven and let the pavlova cool completely in the oven.
  6. Whip the heavy cream until soft peaks form and spread it over the cooled pavlova base.
  7. Top with mixed berries and dust with powdered sugar if desired. Serve immediately.

Notes

Best enjoyed fresh. Store any leftovers in an airtight container at room temperature for up to two days.
