Ingredients

  • 1 quart vanilla ice cream
  • 2 cups cornflakes, crushed
  • 1 cup shredded coconut
  • 1/2 cup chopped nuts (optional)
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar
  • 3/4 cup flour
  • 2 eggs
  • 1 tablespoon milk
  • Oil for frying
  • Chocolate sauce (for topping)
  • Whipped cream (for topping)
  • Cherries (for garnish)

Instructions

  1. Scoop the ice cream into balls and place them on a baking sheet. Freeze until solid, at least 2 hours.
  2. Mix the crushed cornflakes, coconut, chopped nuts, cinnamon, and sugar in a bowl.
  3. Prepare the batter by whisking together the flour, eggs, and milk.
  4. Heat oil in a deep fryer or heavy pot to 375°F (190°C).
  5. Assemble the balls by dipping each frozen ice cream ball into the batter, then rolling in the cornflake mixture.
  6. Fry the breaded balls in the hot oil until golden brown, about 30 seconds to 1 minute.
  7. Drain the fried ice cream balls on paper towels.
  8. Serve immediately with chocolate sauce, whipped cream, and cherries on top.

Notes

For best results, use high-quality vanilla ice cream and ensure the oil is at the correct temperature.
