A nostalgic, No-bake grasshopper pie with a minty flavor and chocolate crust that’s both indulgent and refreshing.

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/3 cup unsalted butter, melted
  • 1/2 cup confectioners’ sugar
  • 1 cup heavy cream
  • 1/4 cup green crème de menthe
  • 1/4 cup white crème de cacao
  • 1 envelope unflavored gelatin
  • 1/4 cup water
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the chocolate cookie crumbs, melted butter, and confectioners’ sugar. Stir until everything is thoroughly mixed. Take this mixture and press it firmly into the bottom and up the sides of a pie dish. Place the dish in the oven and bake for 8-10 minutes. Once done, let it cool completely.
  2. Dissolve the gelatin by sprinkling it over the water in a small saucepan. Allow it to sit for about 5 minutes to bloom. Then, gently heat the mixture, stirring occasionally, until the gelatin fully dissolves. Set it aside to cool slightly.
  3. Whip the heavy cream in a large mixing bowl using an electric mixer until soft peaks start to form.
  4. Fold the cooled gelatin into the whipped cream. Then, gently add in the green crème de menthe and white crème de cacao, folding until everything is well combined.
  5. Pour the filling into the cooled pie crust, spreading it evenly. Cover the pie with plastic wrap and refrigerate for at least 4 hours, allowing it to firm up.

Notes

For a less sweet pie, reduce the confectioners’ sugar slightly. This pie can be made a day ahead of time for the best flavor.
