An elegant and creamy custard dessert with a crunchy caramel topping, perfect for impressing guests or treating yourself.

Ingredients

  • 2 cups heavy cream
  • 1 vanilla bean (or 1 teaspoon vanilla extract)
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (for caramelizing)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Heat the heavy cream and vanilla bean until just boiling, then steep for 15 minutes.
  3. Whisk together egg yolks and granulated sugar until pale and thick.
  4. Combine the warm cream into the egg mixture, whisking constantly.
  5. Strain the mixture through a fine sieve into a pitcher.
  6. Pour the mixture into ramekins, placing them in a baking dish filled halfway with hot water.
  7. Bake for 25-30 minutes until the edges are set and the center is slightly jiggly.
  8. Cool the ramekins before refrigerating for at least 2 hours.
  9. Caramelize the sugar on top of each custard using a torch or broiler.
  10. Serve and enjoy the delightful contrast of crunchy topping and creamy custard.

Notes

For added flavor, consider infusing with orange zest or experimenting with various extracts. Ensure even cooking with a water bath.
