Delightful Cherry Pie Bars that combine the crunch of a crumb topping with sweet, juicy cherries, making for a nostalgic treat.

Ingredients

  • 2 cups of cherries (pitted and halved)
  • 1 cup of granulated sugar
  • 1 tablespoon of cornstarch
  • 1 tablespoon of lemon juice
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of almond extract (optional)
  • 1 cup of all-purpose flour
  • 1/2 cup of butter (softened)
  • 1/4 cup of powdered sugar
  • 1/4 teaspoon of salt
  • 1/4 cup of rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Mix together the cherries, sugar, cornstarch, lemon juice, vanilla, and almond extracts in a bowl.
  3. Combine the flour, butter, powdered sugar, and salt in another bowl until crumbly, saving 1 cup of this mixture for the topping.
  4. Press the remaining crust mixture into the bottom of the greased baking dish.
  5. Pour the cherry filling over the prepared crust.
  6. Sprinkle the reserved crumb mixture and rolled oats over the filling.
  7. Bake for 30-35 minutes until golden brown.
  8. Cool and slice into squares.

Notes

For the freshest flavor, use in-season cherries. Frozen cherries work wonderfully if thawed and drained.
